Description: From a battery whose newest barrel dates to 1965, this product has been cherished by Marisa and her family for over 12 years. Its taste, featuring the delicate perfume of resin, is emblematic of the history of balsamic vinegar and of an art unchanged over the centuries, giving the consumer a taste both historical and genuine, suitable to enhance any dish.
Curiosity: Juniper barrels were typically used in past centuries, giving a characteristic taste of resin, a feature of the juniper plant. Resin also functioned as a preserving agent: in fact vinegar is still used to conserve many vegetables. With maturation, vinegar aged in juniper gradually loses the strong resin taste which softens to delicious harmonic notes.
